Question: if you needed to propel something in space and you only had a canister of oxygen and hydrogen what would be better?

that is a very tough question! To be honest I have no idea as it is very far away from my area but your question is really good and specific! Maybe you’ll be a future chemist, physicist, astronaut? =)
